Mornay Sauce

  • White Sauce
  • Cream, maybe 1/4 cup or so
  • Fresh grated cheese, any combination of sharp Cheddar, Gruyere, Parmesan, and/or Swiss, 1/4 cup total
  • Nutmeg, dash
  • Cayenne Pepper, dash

Make a white sauce, then add the cream and boil till thickened.  Add the cheese, salt and spices then reduce heat to low, letting simmer for a few minutes.  D-O-N-E, done.
