- 1 lb chicken (I recommend thighs. I guess that makes me a “thigh man”)
- 1 can pineapple
- 1/3 cup soy sauce (I suggest the sweeter Chinese soy)
- 1 clove garlic, crushed
- ½ finely chopped onion
- 2 teaspoons fresh grated ginger
First, there are tons of variations on what is “Pineapple Chicken”. This is just mine. If you don’t like it, getcher own damn website. K, now that we’ve got that straight, this is a pretty easy recipe that tastes pretty damn good. Plus, I recommend you try it with my Orange Soy Reduction sauce.
Mix the pineapple, soy, garlic, onion, and ginger up in a bowl, then put in the chicken…I say you marinade it in a zip lock bag for a an hour or so. Pre-heat the oven to 450 F.
Now, place the chicken in a large enough saucepan so that it takes up all the space.. Put the marinade on top and cook for about 15 minutes, then reduce to 325 for another 15-20 minutes. Salt and pepper to taste.
Oh, if you’re boozing it, try it with a dry white wine like a Sauvignon Blanc or Fume Blanc.
