Grilled peaches with Blue Cheese and Honey

  • Fresh peaches, 1 per person 
  • Butter, 2 tablespoons
  • Brown Sugar, 2 tablespoons
  • Cognac, about 2-3 tablespoons
  • Blue cheese, small sliver, about 2 inches long, Ό inch cube
  • Warm honey, drizzled

First off, stop your complaining about this being an odd combination. Where's your sense of adventure, man?  Geesh…..

Ok, slice each peach into about 6 pieces and grill about 2 minutes a side.

In a saucepan or fry pan, melt the butter and sugar, then splash in the cognac. Keep on heat until it's nice and syrupy.

Now, put a nice layer or the sauce on a small plate, then place the grilled peach slices on top. Then, put the slice of blue cheese in the center and drizzle the whole darn thing with warm honey. Try it Mikey, you'll like it……!
